Pan fried halloumi and citrus open sandwich

What is Halloumi cheese?
The cheese is white, with a distinctive layered texture, similar to mozzarella, and has a salty flavour.
It is used in cooking, as it can be fried until brown without melting due to its higher-than-normal melting point, making it a good cheese for frying or grilling (such as in saganaki), as an ingredient in salads, or fried and served with vegetables.

Ingredients:
100g * Over The Moon Halloumi cheese
1 x orange (segmented)
Handful fresh roquette salad
1 x Tbsp toasted pine nuts
1 x jones sea salt *
Thick slice of fresh bread such as ciabatta or foccacia, lightly grilled on one side
Dressing:
Equal parts of * earthbound honeygar
jones * EVO Oil

Method:
- Slice halloumi into 5mm slices & dust with flour
- Toss roquette & orange segments together with dressing
- Place bread toasted side down & top with dressing salad
- Heat a little olive oil in frying pan to medium heat. Fry slices of halloumi on both sides until light golden brown
- Place halloumi on top of salad, sprinkle over a little extra dressing & toasted pine nuts, season with jones sea salt
